On Monday night I cooked Italian Baked Chicken and Pastina. I should have realized this before cooking this meal, but it just isn’t that exciting. A bit of cheese, good flavor from the onions, no great flavor from chicken (obviously), and the parsley. I made the mistake of overcooking the pasta (I really should have paid attention to the 5 minute guideline), but I don’t think that resulted in the boring meal. It just made it a bit worse. The best part was perhaps the breadcrumb and parmesan topping. A more unique pasta/casserole would have been money with the breadcrumb topping. I won’t be making this recipe any time soon.
